Fresh Semolina and Egg Pasta
For this recipe, you will need:
- 1 cup semolina flour
- 1 cup all-purpose flour
- 3 large eggs, room temperature
- 1 tablespoon olive oil
- 1 teaspoon salt
Instructions:
- In a large mixing bowl, combine semolina flour and all-purpose flour.
- Create a well in the center of the flour mixture and add in eggs, olive oil, and salt.
- Using a fork or your hands, slowly incorporate the flour mixture into the eggs and oil.
- Continue mixing until the dough comes together and is no longer sticky. Add more flour if necessary.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
- Once rested, roll the dough out on a lightly floured surface. You can use a pasta roller or a rolling pin.
- Cut the pasta into desired shapes and sizes.
- Cook in boiling water for 2-3 minutes. Serve hot.
