  • 2 cups of semolina flour
  • 2 large egg yolks
  • 3/4 cup of water
  • 1/2 teaspoon of salt

Combine all the ingredients in a large bowl and mix with a fork until it forms a shaggy dough. Knead the dough on a lightly floured surface until smooth, about 5-10 minutes. Wrap the dough in plastic wrap and let it rest in the fridge for at least 30 minutes.

Use a ravioli cutter or a knife to cut the ravioli into individual pieces.

Cooking

Boil a large pot of salted water and cook the ravioli for 2-3 minutes or until they float to the surface. Drain and serve with your choice of sauce.
