Mushroom and Leek Ravioli

  • 3 large eggs
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon unsalted butter, melted
  • 1/2 pound white mushrooms, chopped
  • 1/2 medium leek, thinly sliced
  • 1/2 cup Parmesan cheese, grated

Instructions:

  1. In a large bowl, whisk together flour, eggs, olive oil, salt, and black pepper to make the pasta dough.
  2. Knead the dough on a clean, lightly floured surface for about 10 minutes, or until smooth and elastic. Cover with plastic wrap and let rest for 30 minutes.

  • Vegetable oil, for frying
