One of my favorite dishes to make lately has been homemade ravioli with a blend of Double Zero Flour and Semolina. It gives the pasta such a delicious, light texture that I just can't get enough of. And don't worry if you're gluten-free, I have a recipe just for you as well! Let's get started on making pasta perfection.
Homemade Pasta and Ravioli Dough
Ingredients:
- 1 cup Double Zero Flour
- 1 cup Semolina
- 4 large eggs
- 1 tablespoon olive oil
Instructions:
- In a large bowl, sift together the Double Zero Flour and Semolina.
- In a separate bowl, whisk together the eggs and olive oil.
- Make a well in the center of the flour mixture and pour in the egg mixture. Using a fork, mix together until a shaggy dough forms.
- Knead the dough on a lightly floured surface for 5-7 minutes until it becomes smooth and elastic.
- Cover the dough with plastic wrap and let rest for 30 minutes.
- Cut the dough into small pieces and roll out each piece with a pasta machine or rolling pin.
- To make ravioli, place spoonfuls of your desired filling (such as ricotta and spinach) on one sheet of pasta, leaving space in between each spoonful. Place another sheet of pasta on top and press down to seal the edges. Cut the ravioli with a knife or pastry cutter.
- Cook the pasta in salted boiling water for 2-3 minutes until tender. Serve with your favorite sauce and enjoy!
Gluten-Free Ravioli Pasta Dough
Ingredients:
- 1 cup gluten-free all-purpose flour
- 1/4 cup ground flaxseed
- 1/2 teaspoon xanthan gum
- 2 large eggs
- 1 tablespoon olive oil
- 1/4 cup water (more or less as needed)
Instructions:
- In a large bowl, whisk together the flour, flaxseed, and xanthan gum.
- In a separate bowl, whisk together the eggs, olive oil, and water.
- Make a well in the center of the flour mixture and pour in the egg mixture. Using a fork, mix together until a shaggy dough forms. Add more water if the dough is too dry.
- Knead the dough on a lightly floured surface for 5-7 minutes until it becomes smooth and elastic.
- Cover the dough with plastic wrap and let rest for 30 minutes.
