Today, I am excited to share with you my favorite way of making homemade pasta - using semolina flour! It's a simple process that yields deliciously chewy and flavorful pasta. Plus, you don't need a fancy pasta maker or any special equipment.
Step 1: Gather Your Ingredients
Here's what you'll need:
- 2 cups semolina flour
- 2 large eggs
- 1/4 to 1/2 cup water
That's it! You can also add a pinch of salt if you like.
Step 2: Mix the dough
Add the semolina flour to a mixing bowl and make a well in the center. Crack the eggs into the well, and use a fork to whisk them together. Then gradually stir in the flour, incorporating it into the eggs until you have a shaggy dough. Add water, a little at a time, until the dough comes together in a ball. Knead the dough on a lightly floured surface for 5-10 minutes, until it becomes smooth and elastic.
Step 3: Roll Out the Pasta
Divide the dough into four equal pieces. Flatten one piece slightly, and run it through a pasta roller, starting at the widest setting and working your way to the thinnest setting. Alternatively, you can roll it out by hand using a rolling pin.
Step 4: Cut the Pasta
Use a pasta cutter or a knife to cut the pasta into your desired shape - fettuccine, linguine, or even lasagna noodles.
Step 5: Cook and Enjoy!
Bring a pot of salted water to a boil, and cook the pasta for 2-3 minutes, until al dente. Serve with your favorite sauce and enjoy!
