Who doesn't love homemade pasta? It's perfect for a cozy night in or a date night with that special someone.
Today, I wanted to share my Semolina Pasta Dough recipe with you. It's a traditional Italian recipe that my grandmother passed down to me, and it's a staple in my home.
Let's get started!
Semolina Flour
Before we dive into the recipe, it's important to note the importance of the type of flour used. Semolina flour, which is made from durum wheat, is the traditional flour used in Italian pasta making. Bob's Red Mill offers a great option if you're having trouble finding it in stores.

Ingredients
- 3 cups of Semolina flour
- 4 large eggs, room temperature
- 1/2 teaspoon of salt
- 1/2 cup of water
Instructions
- In a large mixing bowl, add the semolina flour and create a well in the center.
- Add the eggs and salt into the well and begin to incorporate the flour into the mixture using a fork.
- As the dough starts to come together, use your hands to knead the dough for about 10 minutes until it is smooth and firm. If the dough is too dry, add a small amount of water to the mixture.
- Once the dough is well kneaded, cover it with a damp towel and let it rest at room temperature for around 30 minutes to one hour.
- After the dough has rested, cut it into four equal pieces and use a pasta machine or rolling pin to roll out the dough into your desired thickness.
- Cut the pasta into your desired shape, such as spaghetti or fettuccine, and let it dry for about an hour to prevent them from sticking together.
- Once the pasta is sufficiently dry, bring a pot of salted water to a boil and add the pasta. Allow it to cook for about 2-3 minutes or until al dente.
- Drain the pasta and toss it with your favorite sauce. Buon appetito!
